This will prove to be an interesting year for Somerby wines all of the fermentation’s were smooth and complete only one kept us up at night, the wine stuck and refused to restart until it was reseeded with a favorite rescue yeast and even after that stubbornly fermented at the slowest rate we have seen it eventually took close to five weeks to complete. All wines are now racked and ready for the next stage.
The bunches of grapes are crushed and destalked using special machinery, then fermented using specially selected yeasts and allowed to clear naturally. White wines are bottled after 8 months. Red wines are also allowed to clear and are then oaked in oak barrels were they are matured for a period of time before being bottled.
